What are all the default stats editable via traits?
If I have an armor that gives a trait and a weapon for the same trait will the effects stack ?

I believe they stack. I had a default trait + an added trait in-game via Victor's Trait Script and the effects stacked together.

What about stats that traits can effect? Such as Evasion and max hp/mp ?

I know Max HP stacks, so I don't see why Evasion wouldn't.
