No matter what I do the spoiler tags won't show around the text I want them to. First time this has ever happened. What's the dealio?

You've got too much text within the spoiler tag. If you have more than a certain number of characters within the tag, it will not display properly. (I do not know the exact number of characters, however after running a quick test of my own I realised that there is a limit before it breaks the tag.)
I would recommend using this style for the code: Here is all of the first Code:

Put the first 1/4 of the code here.

Put the second 1/4 of the code here.

Good to know. However that's partially the point of spoilers, to hide large sums of text. But it can't be helped I guess.
I just pastebined it instead of spliting it up.

Well, generally spoilers are used for large images and also text that you don't want others to see because the text is spoilers to a game/film/book/etc., but I do see your point. At any rate, glad to see you got it sorted.
