XP and VX tiles are 32x32, while 2k/2k3 tiles are 16x16.
I think there is a FFVI SDK for RMXP but I might be wrong. In any case, the best thing to do is simply to try. Download the trial versions, just play with the engine, and see which one you are the most comfortable with.
FFVI being a SNES game, you can recreate it (visually and mechanically speaking) with XP, VX or 2k3. More than the engine capabilities, you have to consider your own skills first.
