Skies of Arcadia Legends doesn't do anything remarkable or innovative, but it does everything it does extremely well. It has a great sense of humor, a huge world that the game actively encourages you to explore, one of the best casts of characters of any modern RPG (no emo kids!) and loads and loads of charm. I personally prefer the original Dreamcast version, but if you can't play that, the GameCube version does have some extras. The downside; they utterly butchered the soundtrack in this version. Almost all of it sounds muffled and ever so slightly off-key like a cheap MIDI.

Tales of Symphonia is alright. It's way, almost FF7-like, overrated and it's far from my favorite Tales game (which would pretty much be a tie between Eternia and Legendia) but it's pretty good regardless, and it's a 'Cube exclusive outside of Japan.

Paper Mario: The Thousand Year Door and Super Paper Mario are made of pure awesome, as all Mario RPGs are.

Baroque and Sakura Taisen are pretty... out there, but worth looking into if you want something a little different. Baroque is a grimdark, ultra-hardcore dungeon crawler by Sting, developer of the Department of Heaven series (Riviera, Yggdra Union and Knights in the Nightmare). It's like Shin Megami Tensei does Rogue; but more so. You lose everything, even your level, and have to restart the whole game if you die, so that's something that may give you pause. Sakura Taisen is just about the complete opposite, it's a light, fluffy SRPG/dating sim where all of your party members are Broadway performers/Mecha pilots in New York during the 1920's. Musical theater factors into the gameplay. It's utterly wild and bizarre and worth looking into that reason alone.

Aside from that, I'm drawing a blank. There really weren't all that many good RPGs on the GameCube; they all went to PS2 or GBA that generation. The Wii actually seems to be doing worse in that regard.
